Would it be better for me to buy 2/3 of these and crossfire them:

http://www.newegg.com/Product/Product.aspx?Item=N82E16814161315&nm_mc=EMC-IGNEFL011311&cm_mmc=EMC-IGNEFL011311-_-EMC-011311-Index-_-DesktopGraphicsVideoCards-_-14161315-L07A

OR

should i just get 1 of these:

which is pretty good and comes with an awesome warranty:

Which would be better performance wise (like for Photoshop and Gaming overall--> although im looking mostly at parallelization performance)

You have to keep in mind scaling issues. While the raw performance of crossfire (and even better SLI) typically matches or exceeds a single card that doesn't always translate to production. The second issue is that if you crossfire now it takes that option (cheaply anways) away for future expansion. If you go with a single card now, you can always add a 2nd down the road.
