When to build my SB system?

Here's the situation. I'm looking to put together a Sandy Bridge 2500k system with a P67 mobo for around $700. Although I know I could do that now, I'm not wanting to skimp on too many of my other components.

I'm looking for opinions on when you think supply, prices and options will catch up with the demand for new SB tech?

I'd like a framework that, with few upgrades, could last as an acceptable mid-range gaming/balanced PC for awhile so waiting a few months won't kill me if the opinion is that prices will drop enough to allow for a bigger graphics card.
