Which memory for my build?

Hi,
I am planning a new build (gaming and work (standard office suite kind of work,no video editing)) based around an i5 2500k and an asus p8z68-V pro/gen3 motherboard ( i will be using windows 7 64 bits)
I have question regarding ram.
I was initially planning to go for 16gb of corsair low profile ram : CML16GX3M4A1600C9 - 16GB (4x4GB) Corsair DDR3 Vengeance LP Jet Black, PC3-12800 (1600), Non-ECC, CAS 9-9-9-24, XMP, 1.5V
but reading the forums it might actually be better to go for 8 Gb only: CML8GX3M2A1600C9 - 8GB (2x4GB) Corsair DDR3 Vengeance Jet Black LP, PC3-12800 (1600), Non-ECC, CAS 9-9-9-24, XMP, 1.5V

what is actually best 8gb or 16gb?

Perhaps more importantly, since i am new to building computers, I noticed that the ram sticks mentionned above are not of the QVL of the motherboard manual which I downloaded.

Does it mean that i should choose other sticks and if so which ones?

I had chosen the low profile sticks to avoid clearance problem caused by the of heatsink hindering the installation of an aircooler (most probably a thermalright silver arrow).

Can you advise on the best memory sticks that would both suit my purpose and my planned built?

Stick with low profile. I use kingston or patriot ram alot, but my boards aren't asus. Go for price, or use the corsair xmp, since your board should support it. I use 16 gb of gskill on my biostar board; no issues at all, with 25% overclocking possible if I drop the ram speed to 1066 (using 1333). QVL is a sampling of brands and speeds; others may work. Crucial guarantees it's ram to work if you order from their website, and they may not charge a restocking fee like most venders, but you'll pay a little more.

but what do you think? 8gb or 16gb? is 16gb overkill or will it prove useful in the near future?
does anybody know if the two sets of ram I mentionned will work for sure with the asus motherboard?

16 gb is overkill, but when prices were $20-35 per 8 gb, I loaded up.
