I chose the I5 low power version due to the power constraints of the PSU included with the case, is that necessary?

I chose Win 7 Professional for the built in RDP features.

Is 8 GB of RAM overkill? I am thinking of the future so there is no need to upgrade the memory for a while.

the included PSU has 36 amps on the 12v rail. The system recommendation for a 560 ti is 24amp minimum, You don't need the low wattage model, and can go for a standard 2500K. it even has overclock headroom.

8G is fine, especially with RAM being cheap right now
