DDR3 1600 also runs just fine at 1333/1066 often with lower latencies than standard 1066 RAM.
You'd do fine with any high quality DDR3 set, but a good DDR3 1600 set will give you other options if you do overclock the 2500K. Memory can be 'overclocked' as well.
