I want to build the following configuration:

Processor: Intel i5 2500 (or 2500k, i haven't decided yet)
Motherboard: Gigabyte P67A-UD3-B3
VGA: Sapphire ATI HD 6850 1GB GDDR5
HDD: HDD 3.5" 1TB Seagate Barracuda SATA3 32MB 7200RPM
Optical Drive: DVD RW +/- Samsung 22x Black SATA
RAM: Patriot 4 GB DDRIII 1333 (2 x 2GB)
PSU: Chieftec A80 500W v.2.3, w/12cm Fan, 80plus* efficiency, Active PFC, < 1Wat in standby
Case: CM-Chassic ELITE 310 Silver Color, w/o PSU

The question is the following: Will this PSU be enough to run this configuration?

Look for another psu that's a low end unit.
I doubt that unit is very efficient once loaded and the temps climb over 30C.
Entry level Corsair CX Builder series or OZC Stealth 2's would be better.
 
500 watts is an adequately sized PSU. Chieftec is about 1 step above junk. If you really need to use something like this, I suggest that you derate it by 20% or so - treat it like a 400 watt PSU. At that point, "adequate" changes to "marginal".
