Questions I have are:
1) Should I be going with this pcu and mobo or should i be looking more at
Intel Core i5-2500K Sandy Bridge 3.3GHz (3.7GHz Turbo Boost) 4 x 256KB L2 Cache 6MB L3 Cache LGA 1155 95W Quad-Core Desktop Processor
with an ASUS P8P67 mobo.

2) Do I need the COOLER MASTER 212+ or would the stock heatsinks work?

Yes, wait for Sandy Bridge Revision B ... this is $2 over budget .... Since ya have 4-6 weeks to save, I'd try and save another $100 or so an get a GTX 560 Ti

Definate upgrade to the gtx 560 ti.

Instead of two hd i should have one ssd and one hd?

I'd be better off to wait and buy everything at once when the sandy bridge's are rereleased?

Other than that, I should be good? Everything is compatible?

The 750w psu allows you to add another one of those o/c gtx 560's later on.

With dual h/d's in RAID 0 you have a chance of losing all your data if one of those drives go down. One small SSD and one large h/d is the way to go imo.
