New Gaming Rig

I am looking to build a new Gaming Rig with a budget of around $1400. I haven't build a new PC in about 4 years so I am not entirely sure if I've done well or not. Any suggestions on what I've picked would be great. Here are the components that I've selected so far.

If you don't need an o/s (Windows) just subtract it from this build. These 1155 P67 boards are due to be on the shelves in the next 3-4 weeks. There are some benchmarks / reviews of these Sandy Bridge cpu's down towards the bottom of this post.

This build is set up to add another one of those factory o/c gtx 560's in SLI if you so choose. This includes Windows 7, after market h/s, etc...

When do you need to build this? What is your budget?
The current recommendations would be a i5-2500K and P67 motherboard.
SSD would be good at 60GB to save some $$

I was hoping to order the parts this coming week so I can build it next week. I saw the new i5 2500k for sale but didn't see any motherboards at the time. I guess I still have a couple of weeks till some come out. Oh the budget I am looking at is around $1400-1600 with shipping.
