What does DDR3 2300+ Mean? Will the board work with my 1600Mhz?

According to the EVGA Spec Sheet, it will use any DDR3 memory from DDR3 800 to 2133, including 1600.

It will run 1600MHz RAM. If you want to buy 2133MHz or something in between, the board can run it at it rated speed. It is always a good idea to look at the RAM listed in the Qualified Vendors List (QVL) published by the manufacturer - EVGA in your case.
