Looking to get schooled in the area of memory/ram

So I know a fair amount about computers, enough to get me into trouble, well recently I've been looking at upgrading my ram, so I guess I have a couple of questions.

Current ram: OCZ gold series PC3 12800

So first questions: Channels, how do they work? like I understand the whole "if your mobo is a triple channel mobo, then you want triple channel ram", but could I also use hexi-channel kit? does it just have to be in 3's?

2. On my ram it says "8-8-8", I "think" that refers to latency, but not sure. so what is that all about.

3. My current ram runs at 1.65v, is it important to get ram that runs at the same voltage? or does it not really matter?

and last but not least....

4.When it says "DDR3 1600" my assumption is the DDR3 is for triple channel, but what does the "1600" mean?

Thanks for helping me out!, I would like to learn something along with upgrading my ram.

...Hmm maybe no one can answer my questions. Well let me ask this then..

System specs:

Asus P6TD Deluxe mobo
OCZ ddr3 ram (6gb)
i7 960 3.2Ghz
coolermaster V8
Corsair 850w power supply
Radeon 5870

I have started to get into video editing, and my computer works...but I like fast, SO either I look at upgrading my whole system or putting a crap-ton more ram in. I'm leaning twards the ram.

Here is what I currently have:

would this be better?

I would like more ram, but if possible without OC, I would like to make my ram faster also...

Thanks for the help.
