What can you recommend and why?

Is it worth the cost of an extra processor? (3ds max, maya, rendering and modeling)

Is there an older WS setup that could be built to perform similarly (in 3D applications) for a fraction of the cost?
 

I'm not exactly sure why you chose only those two boards...there's cheaper out there that give you similar performance.
