Should I get another 5750 and CF it or should I get a 5830? I can get the 5750 for 99 after rebate and can get the 5830 for 125. What do you guys think?

For overall performance, CFing 2 5750s or having 1 5830 isn't going to be vastly different in most applications. Depending on your PSU (power supply), you may only be able to support 1 GPU anyway. What make and model of PSU are you using?

It is an Azza 850w and it is crossfire and sli certified. It has two power connectors for two gpus. I looked up some becnhmarks and in most cased the cf perfomed a little better than one 5830. I guess for the price I should just crossifre?

You are correct that in apps/games that can take advantage of CF that the CFed 5750s will do slightly better. I concur with your assessment to go that route. The 5830 is really a crippled 5850 which is a crippled 5870 and the 5830 is quite large in size. The 58XX series GPUs are great, but in your case, you are likely better off with the CF config.

Have fun!
