There is no game you need 3 way SLI for. But, it would work fine. (x16/x8/16).

I know, actualy I'll buy only 2GPU now and I,ll wait for price drop for a third one when the 700's will be released instead then selling them to buy 2 new GPU. Also 3way sli get a rid of the microstuttering.
