Is this system a good overclockable gaming system? Have I forgotten anything? Any suggestions or replacements there could be?

Great! Those are actually the same specs I am going for (in terms of CPU, RAM and Graphics)

From my personal view point that is an amazing gaming machine but I am not a experienced overclocker so I can't tell you much. But you should get to 3.7ghz at least!

Using an Intel® Core™ I5 2500K matched up with a P67 board like the one you have listed from MSI will produce an outstanding system that can easily be overclocked. Unless you are looking to run an SLI in the future you most likely are well over on the power you need http://extreme.outervision.com/psucalculatorlite.jsp will show you low end of the power for your system. Other than that your build looks good.
