Graphics cards and scaling for future

Hey everyone,
I recently had my dual 4870s die on me and i was looking at replacing. Problem is that i wasn't really planning on doing any upgrades until the new sandforce SSDs were released like the OCZ Vertex 3, and the sandybridge motherboards were back in the market.
I'm running an old intel quad core Q6600 and i'm running a 30" dell monitor at 2560x1600 resolution.
The plan was to do a complete system rebuild and then go with 6 Samsung Syncmaster MD230 with an eyefinity setup, but i don't really have the resources to commit to that right now. :p
So my question is, i want to get a decent video card that will run my what i can throw at it right now, but is scalable (by adding another card in crossfire), to run the 6 monitor eyefinity setup later.
I have been reading around Tom's since its pretty much the best resource for this kind of thing but the only thing i can find is what is good for 2560x1600 performance.
I was considering the dual 6870s, but will that scale well with the 6 monitor setup i plan on getting in a few months time?
My other thought was to get a single 2GB 6970 right now, then add another one later when i finally get the eyefinity setup, but thats a pretty big cost difference and i couldn't really find anything about those cards in crossfire. I also thought that the extra RAM on those cards would be good for the 5760x2160 resolution that i would be running at with the 6 monitors.
Any thoughts anyone has would be greatly appreciated.

I would say either the 6950 or 6970 as they both have 2GB of memory that will be beneficial for that huge resolution.

For now, either the 6950 or the 6970 will handle 1600p just fine until you come to do your overhaul.

Thanks for the info. :)
I was looking in the roundups for the graphics cards for Feb, and the 6970 wasn't the best 2560x1600 performer, but i realized i was running 2 4870s (with 512MB of RAM each) and it would almost assuredly be better than what i was running. :p
