I recently upgraded my computer from a single GTX260 to 3 GTX 260's in 3way sli.
also upgraded the processor from an E6500 to a QX6700.
I ran benchmarks and there was a huge improvement in performance. but when i play CoD:BO it stutters randomly, it does the same thing in crysis 2 demo.
if i turn off the sli it doesnt stutter at all.
im getting really great framerates but the stuttering almost makes it impossible to play because it happens every 10 or so seconds.
What could be causing this?

Specs:

Crysis 2 does not currently have SLI support in the demo (nVidia has not released an SLI compatible driver for Crysis 2). I get no benefit from SLI with my GTX 470's. I've read about a "work around" using the EVGA SLI Enhancement, however for some people that work around has caused some "flickering" in water textures.

So far as Call of Duty: Black Ops (i.e. console port) I don't have personal knowledge. However, it is an XBOX game ported to PC so I'm not surprised.

Keep in mind generally speaking, SLI is governed by a rule of diminishing returns. Two way SLI nets big gains, tri-SLI nets gains but not as large as two-way. A GTX 260 Core 216 SLI (2 cards) should perform like a single GTX 470.

Make sure you reinstall your nVidia drivers from scratch now that you've installed extra GPUs. And use the latest driver release to be sure you've got the most fresh updates. Also, check and see if you have the SLI bridge connectors attached to your cards. They aren't required, but they certainly will not hurt you. :)

I had the same experience with a 9800 GTX+ SLI. I actually also had a small mouse lag in some games which was unacceptable specially in FPS games. This made me give up on SLI and buy a ati 5870. I'm enjoying it a lot more than the SLI.

Did you install the latest drivers from the Nvidia.com website? Also, unfortunately, you may have to turn on VSync. But in general, I would check through your Nvidia Control Panel to see if any settings need to be changed. Things like Ambient Occlusion and Transparency Antialiasing are sometimes not supported by certain games. Also check to see if you have "Multi-display/mixed GPU acceleration" set correctly. It should be set to "Single display performance mode". There is another setting there called Power Management Mode that might be worth looking at.
