Presented with only those choices, I'd start with the Intel platform. It's just better all the way around. It's not the best video card option, but you can always upgrade your video later.

Also, I don't know how strict your budget is, but for only $30 more you can get an unlocked i5-2500k.

1920X1080.... aren't games more dependent on the gpu than cpu at that resolution??

Yes they are to an extent but the Intel chip is the better chip anyway as far as gaming goes regardless of resolution.
