If you do not plan on overclocking, definitely go for the 2500, or less.

My plan is to build a system optimized for photoshop... I initially went for the 2500k since it's just $10 more than the 2500... but it seems 2500k goes hand in hand with overclocking, which I know nothing about...

The differences between the Intel® Core™ i5-2500 and Intel Core i5-2500K.
Intel Core i5-2500:
-TXT (Trusted Execution Technology, this is a hardware base virus protection technology)
-VT-d (Virtualization with directed I/O, virtualization generally used with about 5 or more VM’s running)
-Intel HD 2000 Graphics
Intel Core i5-2500K:
-Unlocked multiplier (allows overclocking of the processor)
-Intel HD 3000 Graphics (better then the HD 2000 Graphics)
The value behind the Intel Core i5-2500K is that even if you aren’t planning to overclock now you can still do it in the future giving you a little more value out of the processor.
