Do you think I would need 850W for what I've got there? And if in the future I decided I wanted to get 2 graphics cards would 850W cover it?

Run this tool to help you find the minimum you need in a power supply http://extreme.outervision.com/psucalculatorlite.jsp. With the items listed on his build the power supply calculator places the minimum power needed on this build at 393w. So a good solid 650w power supply should be more then enough to fit their needs. For Crossfire the power requirement goes up to 509w needed. So even with 2x 6950 video cards a good 650w like the corsair should be enough.

Thanks :) In that case I shall purchase the power supply you suggested earlier.
