PSU: Neither if you plan to overclock cpu + gpu & sli 580s in the future. I'm kicking myself for getting a 850watt psu for this very same reason. Go for a 1000+ watt psu.

Mousepad: None, it all depends on the type of surface that you are used to or what type of surface you want to use. Ex. I've always loved using large soft foam mousepads vs the smaller exotic surface ones.

Programs: Most mid to high end motherboards come with their OC/temp programs for windows & you can do it the old school way of the bios. CPU-Z is a great program to monitor your system info though.

Because a Gtx580 at full stress will use 447watts & you stated you plan on OC'n & SLI.
