What size Power Supply

Looking at a new rig, but I do want to future proof myself if I ever decide to run 2 video cards.

So given either:

2 ASUS 6850

or

2 EVGA 560 ti

would 750W PSU be enough?

More than enough, get a PSU that is at least 80% efficient.

Doesn't one of those 560 ti's require 500W alone?

The 500W PSU recommendation from Nvidia is for a whole system including the GTX 560 Ti. A GTX 560 Ti has a TDP of 170W, so on maximum load it might draw that much.
