EDIT: Which Ivy Bridge CPU should I use with H67 chipset?

I have an ASUS P8H67-M Evo motherboard and I am trying to figure out which CPU I should go with. I currently have 16GB of DDR3 1333, a 1000 watt PSU, a Powercolor Radeon 7770 GPU and am planning on getting 1 more GPU for Crossfire. I dont believe in overclocking because it kills the life of the processor and I figure the new Ivy bridge processors are more than fast enough for gaming with a nice crossfire setup. So with all that, which processor should I go with that would be appealing to a gamer not overclocked? My BIOS is flashed to the most recent so I CAN support Ivy Bridge.

I say go for the fastest non k version of the i5.
