i3-2100 3.2ghz intel cpu
gigabyte h67 mother board
8GB (2x4) g.skill memory
Corsair 600w power supply
seagate 500gb hard drive
hp dvd burnr
Antec 300 case


Also, wondering the importance of spending the extra $30 on the 8GB rather than the 4GB ram.

For what you have now, your PSU is overkill. You can see oc don't do much in i3. Since no i3 are k, they are not really good for oc, so no.

Well, the $500 build is virtually the same as what you are going for. As long as you get a quality 380w psu, I cannot see any problem, unless you want to xfire, sli in the future.
