New i5-2500K build, Win7 + Linux, advice?

Budget Range: ~ $800
System Usage from Most to Least Important: Civ5 (and other less demanding games), video transcoding, datamining, general web/productivity/etc.
Parts Not Required: keyboard, mouse, monitor

Parts Preferences: i5-2500K, mid-tower case
Overclocking: Yes
SLI or Crossfire: No
Monitor Resolution: 1920x1080
Additional Comments: Would like to dual boot Windows 7 and Linux, no need for bling

I'm pretty settled on getting the i5-2500K. Open on Mobo/RAM/Graphics. Thoughts?

Civilization 5 is not a very demanding game . Based on that here's a build (with OS):

CPU : $220-i5-2500K(Same)

Motherboard : $130- Gigabyte GA Z68A (Cheap and support SLI/Crossfire at 8X/8X)

Power Supply : $45- Antec EarthWatts 430D (Decent for supporting a 6850)

Case : $35-NZXT Classic Gamma Series ( Don't know whether you would like like it)

RAM : $42- Mushkin Enhanced BlackLine(2X 2GB at 1.5 volts)

HDD : $60-Seagate Barracuda 1TB or Samsung Spinpoint 1TB from Amazon(this is faster).

Optical Drive: $19- LiteOn

Graphic Card : $160- HIS Radeon 6850

OS : $100-Windows 7 Home Premium SP1 64bit

Total : 812 USD

The cooler has been excluded becaue it went overbudget. However if you want $30 cooler Xigmatek Gaia or Cooler Master Hyper 212 from Amazon

Like the advice on the cooler.

My point on Civ5 was that I don't play especially graphically demanding games (at least on PC). So my question is why would I spend $160 on a GPU I don't really need? I'd rather spend the money on the cooler overclocking my unlocked CPU.
