what Intel CPU is adequate or best for maximum DVD copying speed?

It will most likely depend on the dvd drive you are using, but i would recommend an i7-2600k.

I believe the i7-2600k would be overkill.

Ripping a DVD or Blu-Ray depends on the speed of the optical drive and the speed of the hard drive. The CPU does not really play any role unless it is too weak to simply use Windows.
