Trying to keep it under 1k but I'm doubtful I will with my taste in parts and the fact I need OS and monitor. Would appreciate the help in choosing a reliable MB and GPU for possible SLI in the future or just upgrading to a keplar series when they do come out. All thoughts appreciated.

Mem - G.SKILL Ripjaws X 8GB - 59.99 Newegg - at this price I couldn't resist
PSU - SeaSonic X750 Gold - 129.99! Newegg - Again with reviews and price I couldn't help it - I know I could save with a non-modular
SSD - Crucial M4 116.49 Newegg
HDD - WD Cav Blue 500GB - 39.99 Newegg
Cooler - Hyper 212 - 29.51 Amazon
O/S - Win 64 Home or Pro - havin't really decided yet which one matters...
Monitor - ASUS VH232H - 139.99 Newegg
CD/DVD - Sony Optiarc 18.99

Considering:
MB:
ASROCK P67 Extreme4/ASUS P8P67 PRO

GPU - 560TI/570/6950/6970
I like the 560TI hawk but at that price I might as well bump up and get the 570 is my thought process

Thanks again!

Id suggest you drop the ssd and that hdd and just get this 1tb sinpoint f3

http://www.newegg.com/Product/Product.aspx?Item=N82E16822152185&Tpk=sinpoint%20f3

$49.99 with the promo code located on that page.

That will free up a good portion for your MB / GPU and keep you within your 1k unfortunately my expertise as to which MB / GPU to get is lacking so I'll hand that over to someone else.

You can always add in a SSD later and the longer you wait the cheaper it will be!

Also, decided to switch out the PSU and case for these:

COOLER MASTER Silent Pro Gold Series RS800-80GAD3-US 800W ATX 12V v2.3 / EPS 12V v2.92 SLI Ready CrossFire Ready 80 PLUS GOLD Certified Modular Active PFC Power Supply

Any thoughts on what else I should do? Still need to pick a GPU :/

Would appreciate any comments or changes on what I've picked so far

The PSU chosen is great, but somewhat overpriced, you can get an efficient PSU for cheaper. Also depending upon your budget you may look into Radeon 6970 or GTX 570 . Both offer exceptional performance. If you are short of funds you can always switch down to Radeon 6950 2Gb or GTX 560Ti .
Here are possible PSU & GPU combos that may interest you (psu- corsair enthusiast tx850 & 6970 or gtx 570 ):
