OK, here are my thoughts:

1) 2500K as good as it gets for gaming.
2) P67 mobo OK. Z68 has some capabilities that you won't use.
Edit: See if the "quick sync" capability of Z68 might be useful to you for editing.
3) I think the graphics card is underpowered for the rig if your objective is gaming. I also do not like the coolers that dump air back in the case, compared to the double slot direct exhaust type. A GTX560ti or GTX570 would be a better balanced card.
4) I know ram is cheap, but do you really need 16gb? For most users, 8gb is the sweet spot. You can add more later if you need it.
addendum: if you will use photoshop, I think it can make use of extra ram. 16gb will be interesting.
5) Caviar black is a good drive...

Intended usage is gaming ( WoW, Borderlands, whatever else), video and photoediting, and music. Current monitor resolution suggestion is 1920x1080. Budget is $1300.

6) Corsair H70 is expensive, and will not cool significantly better than a decent air cooler. Save yourself some $ and get a XIGMATEK Gaia SD1283 120mm for $30.

7) PSU is good, but strong, unless you are planning on sli. A better plan, in my opinion is to get a better graphics card up front, and save on the psu and mobo.
By the time you need to upgrade, there will be faster/cheaper/cooler cards available.
8) gear head is a dvd brand unknown to me. Does it do anything better than a samsung at half the price?

9) Cases are a personal thing, the lanboy will be a good cooling case, but a bit garish for my tastes. Get it if you love it.

I'm going to go with that air cooler instead, but I see reviews of the case and having an issue with larger coolers, are you sure it will fit? ( The cooler fits in a build I did for my friend with a Raidmax smilodon). The dvd/cd drive is being swapped for the suggested. As for the graphics card, I am thinking this: EVGA SuperClocked GeForce GTX 560 Ti (Fermi)- http://www.newegg.com/Product/Product.aspx?Item=N82E16814130610 .
 
The case is 8.7" wide, about 220mm. Most tower type coolers with a 120mm fan will be 160mm tall, just like the xigmatek.
The side fans look like they are positioned over the expansion slots, and not too high. If oriented to exhaust out the top, I think you are good.

The evga GTX560ti is a good step up. EVGA is good, they have a 90 day step up program if you want to exchange it for a stronger card. Be certain to register it.
