Which processor would be best for a new PC build

It would going in this MB

Obviously one is a Quad core, the other is Six. However the Quad core has a higher core speed.

So which would I benefit from most. The extra cores? Or the extra speed?

Also I understand that not too many programs take advantage of six cores yet. But I imagine they soon will.

This is a noob question but is it more stable if it is overclocked by the manufacturer? Or is it all the same? Also if I OC it and somehow kill it wouldnt that kill my warranty?
