DDR3 Dual Channel or Single module 4GB!!!!

Hi, After reading some of the threads about dual channel vs single channel rams.. Now im even more confused. So i just want you guys opinion on what i should be getting and why.
my specs are :
C2 Quad q9650 3.0
MOBO: MSI P43-C51 http://www.msi.com/product/mb/P43-C51.html#/?div=Detail
GPU: HD 6850

Now initially i will be using 4GB ram ( due to limited budge ). After sometime i will go for 4 more GB of ram and will also be overclocking my processor and ram obviously. My main purpose is to play games and some video editing stuff with after effects and 3D max.
Now here are my options
1. corsair vengeance 4GB dual channel ddr3 (CML4GX3M2A1600C9)

Which one would be a better choice for me and why?

I'd shoot for 8gb since you're video editing as those programs tend to eat quite a bit of memory, so maybe 1 4gb stick for now then adding another later would be good, or like o1die said get a used pair
