Long story short: they are color coded.

When you are only going to use 2 sticks of RAM, they have to be in a certain configuration for them to work with the motherboard. The motherboard makers have provided you with a nice visual cue as to which slots you must use (you can't use one stick in a black slot and one stick in a white slot). Saves you from looking up the proper configuration in your mobo's manual.

The colors indicate the banks for dual channel memory configuration. Populate each bank with two identical chips for proper operation, that's why memory is often sold in pairs. Long story short, operating in dual channel is better. Google dual channel for an in depth discussion on it. If only populating one bank at a time start with the one that has the slot closest to the CPU.
