Your build seems pretty Solid/Standard.
Only things I can nit-pick at are: your PSU. 800 is nice, but Ti series GPUs are known for their power-sucking abilities. I think youd be more comfortable with a 900W PSU. It will also allow for SLI and OC better than 800. Not that it cant be done with 800, but on a PSU you never want to skimp.
As for your Cooler, the Frio is "Nice" speaking of Specs/Performance as well as Looks, however, the CoolerMaster 212+ is Half the price and performs just as well, if not better (in my experience). Also an easier Install.
Solid choice on HD, it is my favorite to date so +1 for that. They also RAID very nicely. If your thinking of getting a SSD (Boot-Drive) there is currently a 60gb Drive on Newegg for only 100$. (Normally 150)
As for your MOBO, I heavily suggest P67. Z68 has some stability issues, especially with RAM, then again, I dont know if your Overclocking in the future.
That being said, the P67 is VERY easy to set up, very stable, clocks well.
As for GPU. 2GTX560Ti's in SLI > Stock 580. That however, does not help if you want to SLI 580s in the future. My advice would be, if you are going to SLI in the future and you want a Solid start get a 580 now. Instead of 2 560s. You wont notice a Massive difference and it gives you a foot-ahead for future SLI.
