After looking at some of the builds on this site and getting advice from a friend with more experience than I, this is the build I'm looking at. Again, ~$1000 budget, focus on gaming, ease of assembly, and room for upgrades.

The biggest thing I'm trying to figure out is what MoBo to buy. My friend recommended getting a P67 chipset mother board, socket 1155. From what I've read, this is more of a gaming board than the Z68 (no onboard graphics).

Advice on these or other boards would be greatly appreciated. I have a big old Antec SX1000II case that I plan to re-use as well. Planning to run Windows 7 from a SSD.

A bit more general info which may help:

Approximate Purchase Date: Next Couple of Days

Budget Range: Around $950 - 1000 before rebates

System Usage from Most to Least Important: Gaming, Surfing the internet, watching some tv programs

Parts Not Required: Mouse, Monitor, Keyboard, Case

Preferred Website(s) for Parts: Newegg or Amazon

Country of Origin: US

Parts Preferences: Intel

Overclocking: Not planning on it in the near future, maybe a long term project

SLI or Crossfire: I would like to have the option for future upgrades, but not the most important thing to me

Monitor Resolution: 1280 x 1024 (this is what I'm running on my shitty old PC right now, the current max is 2048 x 1536)

my suggestion: get a new, higher resolution monitor.

this Acer would be perfect ($119.99)

You can get the Antec Gamer series 620W PSU for $69.99 that will be enough to run 2 6850s in crossfire if you plan to upgrade to that

If you do plan a crossfire, I reccomment this board:

If you don't, then this board:

This build allows you to add another one of those cards later on for SLI. Just add a case to it.
