Is it safe to use a z77 board with a 2500k? will it have any drastic performance loss? For gaming of course.

The Z77 supports the 2nd generation Intel® Core™ processor without issues. Now if you are trying to use a "6" series board with a 3rd generation Intel Core processor you are most likely going to have to update the Bios to support that processor before you can use it.
