I'm not sure how much RAM I need and which brand is the most reliable.

I have 8GB of stock RAM that I got with my XPS8500 and I

would regularly use 6-7 GB of it and I would like more.

Solution
Or get 16GB of it...

CORSAIR Vengeance 16GB (4 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600

Vengeance Low Profile heat spreaders have a reduced height of 1.03" (26.25mm). They're designed for high-performance systems with extra-large CPU coolers, small form factor system builds, or any other space-constrained application where standard Vengeance memory might not fit.

I am a gamer and like to play games at the max setting that my set up will run. I also do HD video capture and editing.
I have 2x4GB of RAM currently and I have heard that getting a fresh set of RAM (e.i. 4x4GB) is better then just adding on (e.i. another 2x4GB).

Either u can add more RAM...

I recommend CORSAIR Vengeance 99% of the time, quality RAM and low profile with XMP profile. And if u will get an aftermarket CPU cooler, low profile is the worry free remedy with perfect fit with any large cooler.
