ok u should have enough watts to run every thing

your video card looks good (a gtx 560 will slightly out preform it)

the ram in the second build will be runing in single channel mode if you use 3 sticks i would get some gskill 8gb kit (2x4)

oh and whats your budget?

Solution
I would go with an Intel setup if I were you, even the bulldozer will be a innefficient processor compared to the higher end sandybridge cpu's and you won't have compatibility with a piledriver by the looks of things.

GA-Z68XP-UD4 or UD5
Asus P8Z68 V Pro or P8P67 Pro
i5 2500k

much more efficent than anything AMD have to offer, and you have the option of going to ivybridge down the line, if it is at all necessary.

since your not trying to blow all your money, stick with AMD. I have a triple core phenom ii 720 oc'ed to 3.4, 8 gigs of ddr3 1333 and a gtx 460 that i overclock a little and i max vsync @ 60fps with everything on the games you mentioned (besides BF3) cranked to the max at 1920x1080 with out a drop below 60... ever, crysis warhead, crysis 2, bfbc2, black ops, mw2, dirt 2 and 3, assassin's creed series and more and like i said.. never a hiccup
