That's a decent setup except for the power supply. Rosewills aren't great PSUs, and 1000W is enough to run 2x580s (if that's the ultimate goal). Look for a good Corsair, XFX, or Seasonic PSU, about 750W for a single and 900+ for SLI.

Also, why do you need the 3GB model? 1.5GB VRAM is more than enough if you're running a single monitor setup. The 3GB models are made for things like NVidia 3D Surround, where you need the extra VRAM.

Like boiler pointed out, those 3GB cards are for a multiple monitor set up. The extra RAM actually hurts FPS on a single monitor set up due to RAM latency. Also like he pointed out, a Rosewill psu isn't the way to go.

For a psu that will push dual 580's in SLI then these two down below are worth looking at.

Here's a quality non modular that's gotten great reviews.

Antec High Current Gamer Series HCG-900 900W ATX12V v2.3 / EPS12V v2.91 SLI Certified CrossFire Certified 80 PLUS BRONZE Certified Active PFC Power Supply

This psu down below is manufactured by Enermax for LEPA and it's top of the line.

These are good PSUs. I second them whole-heartedly.

Your build is fine. None is the bottleneck for other parts.

Just change that PSU to a Seasonic or Enermax made one.

Something like the Corsair AX850 will handle 2 580's with no hiccups. But will you SLI in the future? if not, then a 550-600W high quality PSU is fine for a single GTX 580.
