the gtx 570 will give you exceptional performance, the gtx 580 has relatively poor price/performance. only go for the 580 if you are a graphics whore and/or you like to waste your money.
I crank every detail with max AA and AA transparency and stay well beyond 60fps at 1080p with 2 580s. One 580 by itself is great. I would go for the single best video card you can get within your budget. $400 is a great deal for that 580 card. I'd recommend that.

the gtx 570 is also $70 off. you asked if the gtx 580 is worth the extra $120 or about 40% cost increase. you will get nowhere near a 40% improvement in performance.
