Hello all,
My budget will allow an upgrade to an i3 or possibly i5 build soon and in looking at the parts I am currently using/typing on, I wanted an opinion as to if this:

PC Power and Cooling S75CF 750W EPS12V SLI Certified CrossFire Ready 80 PLUS Certified Active PFC Power Supply
http://www.newegg.com/Product/Product.aspx?Item=N82E168...

would be reusable.

I realize it is a horribly beginner question, but I obviously have 0 knowledge or frame of reference as to if these connections would work for say a 6950 or 560ti and would I have the option to CF/XFire later on?

both the 6950 and 560 take two 6-pin PCI-E power connectors each (so you would need 4 connectors for SLI/CF)

your 6+2 connectors can be used as 6-pin or 8-pin so you are all set with PCI-E power connectors also.
