Multi Monitor Setup - How difficult is it?

Was thinking of trying a multi monitor setup 2 or 3 screens depending on the price I can get them for. Current Video Cards are gtx580s in SLI, (I have them on order.) I've never tried to set up more than a single monitor before, how difficult is it to get running? and does it remain stable?

 
Multi-monitors will run fine with those cards. There's a diagram on the Nvidia site regarding how to hook up 3 monitors:

If you're planning to game across multiple monitors, 3 is the magic number, otherwise you'll end up with the crosshairs on the bezels in a 2 monitor setup. Because of the, Nvidia surround will only work with 3 monitors. On the other hand, if you just want to use a second monitor for your Windows desktop in a non-gaming capacity, you can just plug another monitor into your primary card.

That will be a great setup with 3 monitors and those 2 cards.

Note- 3D Vision Surround is an all encompassing technology that doesn't require you to have 3D monitors / glasses. You can just use the 'Surround' part of the technology if you're using standard monitors:

Also, the 3 monitors all have to be set to the same resolution, have the same refresh rate and sync polarity:
