I'm new to building computers and I'm a heavy gamer. I don't know if I should get two MSI GeForce GTX 560 Ti (Fermi) N560GTX-TI Twin Frozr II/OC Video Card or one ASUS GeForce GTX 580 (Fermi). The msi is 256 bit while the ASUS is 384 bit, do the bits add up? They both cost the same. Is it better to have one really good card or two good ones, all the specks are close enough except the bits. So which one should I get and do the bits add up if you have two video cards?

No, the bits do not 'add up' if you have two cards and neither does the Vram. I prefer to run two cards in SLi, one reason being that I should always have at least one card to use if a card fails.
^... and SLi setup is usually better bang for buck. OP: 2 GTX560s in SLi will be faster than 1 GTX580, but you won't be able to add one more card *GTX560 does not support 3 way SLi*
