Is 600 watts enough?

Video Card: Radeon HD 6870

CPU: i5 2500

RAM: 8GB DDR3

Hard Drive: 500GB

DVD Burner: Asus 24X DVD

Will 600 watts power this?

It would depend on the quality of the power supply. On a good quality power supply, 600 watts is more than enough for that setup. A good 500 Watt PSU would be sufficient for that system, you would only need more if you intend to add another 6870, or do some insane overclocking. On some of the poorer quality units, 600 Watts might be just barely enough. It would help to know what make and model of PSU you intend to get. Something in the 500 Watt range from Antec, Seasonic, Corsair, XFX, Enermax, or PC Power and Cooling would do well in powering your system.

Should I go with 500 watts to save money? Or should I just be safe with 600? I will not be overclocking and I won't have dual video cards.

Any 600 Watt Corsair is more than enough for that system. Like I said, you shouldn't need more than that unless you intend to go for a dual GPU setup, or a really extreme overclock.

Edit: If you don't want to Crossfire or overclock, a 500 Watt is sufficient for that system.

The power supply unit should have a combined +12 Volt continuous current rating of 27 Amps or greater and have at least two 6-pin PCI Express supplementary power connectors.

Even a Corsair Professional Series HX450W (CMPSU-450HX), if you can find one, with its +12 Volt continuous current rating of 33 Amps and two 6+2 pin PCI Express supplementary power connectors, is sufficient to power your system with a single Radeon HD 6870.

It's not the power supply's total wattage that determines whether or not it is capable. The only power supply specification that is the most critical is the power supply's combined +12 Volt continuous current rating.

The Corsair Builder Series CX500 V2 (CMPSU-500CXV2) has a +12 Volt continuous current rating of 34 Amps and has two 6+2 pin PCI Express supplementary power connectors so it meets all of the electrical and power connector requirements.
