HD 6990 vs 2xHD 6950 vs GTX580

OK i have read more graphics cards articles than the average man over the last 2-4 weeks and I am now properly confused. I have built a new pc exclusively for Battlefield 3, which is said to be released on 25 October. I am from South Africa so do not have as wide a range as you do in the USA/UK, but generally we can get:

ASUS (which i prefer)
Gigabite
EVGA
Club
Sapphire

System specs:
i7 2600k which I plan to run at about 4.2-4.4
Coolermaster V6GT cpu cooler
HAF X chassis
ASUS P8P67PRO mobo
8GB DDR3 1600 RAM (Kingston HyperX)
750W GX Coolermaster PSU
Corsair 60GB SSD
WD Black Caviar HDD
Windows 7 home premium OS

My screen resolution is 1920x1080

Questions:

1) should i get another 8Gb RAM?
2) will my old ASUS Xonar D1 be enough for audio?
3)This is the real issue what graphics card:

The HD 6690 review here at Tom's was not too flattering.

I have never done a crossfire set up, and I am a little scared of driver issues etc. My IT knowldege is uhmmm, not that advanced.

I believe the image quality is better with Radeon than Nvidia, there fore prefer it.

Therefore:

Do I go for the 6950's in crossfire or wait for the 7000 series. Budget less than about $1000

oh and a can get MSI and Gainward. The MSI 6950 is quite a bit cheaper than the ASUS
