Using my gaming PC on my Plasma TV.

I just ordered dual 570 gtx's, asus pro v mobo, i5 2500k, 8 gigs of corsair ram...all that fancy stuff but my question is if I want to run some games or movies using my new 2011 Panasonic ST30 plasma television do I have to change the color space to get an accurate picture like you would with consoles or will the Nvidia cards do it automatically for me and all I'll have to do is adjust brightness/contrast/color on my TV?

Just plug your SLI'ed cards to your Plasma HDTV via HDMI or VGA.

There is a common issue with connecting a PC to a HDTV where either:

1. The desktop does not fill the screen even at 1920x1080.
2. The desktop is too big to fit on the screen all at once even at 1920x1080.

You need to go into nVidia's control panel to adjust the scaling (where ever that may be) to properly fit the desktop on the HDTV.

Adjust brightness / contrast as you see fit.
