I wouldn't put much merit in the amount of VRAM there is on a gaming card (given same gen cards). The 560 ti is still going to give you better performance than it's non-ti counterpart.

In theory, more VRAM should offer better performance for higher resolutions or multi-monitor setups, but I have not seen one review where this has been shown to be true. This review tells the story regarding the difference in performance between the non-ti 1GB/2GB and the 560 ti:

If I had to choose between the two, I'd go for the 'ti' version.
