I7-860 with 2 hd5970's

Will I have a problem with bottlenecking if my i7-860 is clocked at 3.3 with 2 hd5970's? If so, what clock speed should I get to in order for there not to be a bottleneck? (I know this is case specific with other hardware but in general what would be a safe clock?) Also, I'm sporting a 850tx psu, I checked AMD and they recommend an 850 for a 5970 quadfire setup. But I have been reading other forums where they generally recommend a higher PSU but don't have any data to go along with it. I guess once games become more taxing on my system I will see the need for overclocking but for now I think I will be fine so noworries with the extra power consumption due to overclocking. Am I better off looking into sandy bridge for this type of setup then? I know people have reached 4ghz with this processor but not for everyday uses. I want a stable over overclock that I don't have to worry about frying my machine. If that's the only way I'm going to be able to accommodate 2 hd5970's then I might as well look into an i7-2500k. what about the power supply?

I have the corsair 850tx. When I got it I had in mind the thought of adding another card...
