The RAM sticks I'm considering are

Corsair's value ram @1333

and

G.skill Ares @1900.

I'm gonna use them alongisde a i5 2320 and a GTX 660 non-ti.

I was wondering how much of a performance increase (fps) I would see with the G.Skill RAM in games like Batman Arkham City and Borderlands 2, and if by overclocking it that amount could be increased even further.

Or I could just go with 2x2 4GB of Patriot Signature Sticks since no game I'm planning to get asks for more than 4 gb.

First, RAM frequency on most LGA 1155's where the Sandy Bridge i5-2320 makes good sense won't support >DDR3-1333 frequency memory. To use >DDR3-1333 with your CPU requires a e.g. P67/Z68/Z77 chipset MOBO.

Ideally for Gaming I recommend a 2x4GB kit and if supported DDR3-1600 CAS 9. I don't recommend G.SKILL Ares kits because of their high VCCSA/VCCIO voltage requirements but other G.SKILL kits are fine.

Q - What MOBO?
