Will this system run Skyrim at MAXIMUM sttings?

should do very well, depending on your max resolution.

there's no real gaming difference between a 2500K and 2600K, save $100 and get the 2500K.

get a Seagate 1TB drive instead. $25 cheaper.

the price difference will get you into HD6870 and GTX 570 territory.

*Presume you mean't 6970 here ;) *

Either way, I agree :) But if your upgrading to a 570/6970 your going to want an 850w PSU if you plan to add a second card in SLI. Swapping to an i5-2500k and a SeaGate HDD should just about cover this cost id have thought.

@ OP - I don't see a motherboard listed?

SKYRIM I don't believe will be too graphically-demanding. A GTX 50Ti should be plenty to run max details with any resolution up to 1920x1080 :)
