does anyone know whether a Gainward GeForce GTX 560 Ti 2GB Phantom, would be worth the money?

I don't think you will make use of the 2gb vram.. I also think the price is close to the GTX 570.. you may as well just buy the GTX 570 isntead.. you won't regret it. GTX 570 sli can get you pretty far :)

The 2gb of ram would most likely help if your going to be gaming on a multi-monitor setup. If your running one monitor at 1900 pixels or less, do as wintermint suggested.

i was hoping to get at most three monitors set up. i was looking into getting radeon just for that reason but i've heard nvidia is better for design, animation and film editing purposes?

Depends what programs your going to be using, so you'll have to see what card is best for what program. Some apps are gpu accelerated some aren't.

@HasteTheDay1 - what card did you go with in the end? I'm also looking at this card for CS5 Premiere Pro and AF. I'm running a GE240 which is ok but was hoping to up performance with more CUDA and more/faster ram.
