Looking to upgrade my current system, these are the components I have in mind

I am planning to OC the cpu and the gpu

Looks good.

According to EVGA, a GTX560Ti needs 500w with 30a on the 12v rails plus two 6-pin PCI-E power leads.

It is not wrong to overprovision a psu a bit.
