Running multiple monitors

Hello,I'm buying a new computer and want to run 3 24" monitors at the same time with 3 different programs running. Do I need 3 video cards or 2 or just one with3 outputs?

I know that the "new" amd eyefinity technology allows you to set up up to 6 monitors, depending on how many displays the amd video card supports at one time. I guess eyefinity is a program + drivers, etc, but I'm not too sure. I'm also asuming that eyefinity comes free with eyefinity graphics cards.
